- 1 teaspoon baking powder (Amazon EU/UK) or (Amazon US/Can)
- 1 teaspoon vanilla extract (Amazon EU/UK) or (Amazon US/Can)
- 1 tablespoon powdered inulin (optional) (Amazon EU/UK) or (Amazon US/Can)
- Extra melted butter or coconut oil for frying
Method
- In a medium bowl, beat the eggs with a balloon whisk or an electric mixer until frothy.
- Add the coconut flour, melted butter or coconut oil, almond or coconut milk, baking powder, vanilla extract, and inulin powder (if using). Mix until the batter is smooth and let it sit for a few minutes to allow the coconut flour to absorb the liquids.
- Heat a skillet or non-stick frying pan over low heat and melt a little butter or coconut oil.
- Pour 2 tablespoons of batter for each pancake onto the skillet, spreading it with the back of a spoon to about 4 inches (10 cm) in diameter. Cook 2-3 pancakes at a time.
- Cook on low heat until bubbles appear on the surface (about 4-7 minutes). Avoid moving the pancakes during this time.
- Carefully flip each pancake and cook for another minute until fully set. Continue with the remaining batter.
